The Phaff Yeast Culture Collection in the Department of Food Science and Technology preserves and distributes yeasts collected by University of California researchers since the early 1900s. It now has 10,000 strains belonging to 1,500 different species, about 60% of the known yeast species, and is the fourth largest collection of its kind in the world. Yeasts are used by researchers around the world for basic and applied research, teaching and outreach.
